Thai Cashew Chicken with Basil over Jasmine Rice

This Thai Cashew Chicken with Basil is a delightful combination of savory chicken, crunchy cashews, and aromatic basil, all served over fragrant jasmine rice. Ingredients:


- 1 lb chicken breast, sliced into bite-sized pieces

- 1/2 cup cashews, roasted

- 1 cup fresh basil leaves

- 2 tbsp vegetable oil

- 3 cloves garlic, minced

- 1 bell pepper, sliced (any color)

- 1/2 cup onion, sliced

- 1/4 cup soy sauce

- 2 tbsp oyster sauce

- 1 tbsp fish sauce

- 1 tbsp brown sugar

- 1 tsp cornstarch mixed with 2 tbsp water (for thickening)

- Cooked jasmine rice, for serving 🍚


Directions:


In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes. Toss in the sliced bell pepper and onion, cooking for an additional 3-4 minutes until vegetables are tender.


In a small bowl, mix together soy sauce, oyster sauce, fish sauce, and brown sugar. Pour the sauce over the chicken and vegetables, stirring to coat evenly. Add the cornstarch mixture to thicken the sauce, cooking for another 2 minutes until the sauce is glossy.


Remove from heat and gently fold in the roasted cashews and fresh basil leaves until just wilted. Serve the Thai cashew chicken over a bed of fluffy jasmine rice. Enjoy the vibrant flavors and textures of this delicious dish!
