Ingredients:
- 1 lb beef sirloin, thinly sliced against the grain
- 1/4 cup cornstarch
- 1/4 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup vegetable oil for frying
- 2 tbsp Szechuan peppercorns
- 3-4 dried red chilies, chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, minced
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sugar
- 1 tsp sesame oil
- 2 green onions, chopped for garnish
Directions:
In a mixing bowl, combine cornstarch, all-purpose flour, baking powder, salt, and black pepper. Toss the beef strips in the mixture until well coated. Heat vegetable oil in a deep skillet over medium-high heat. Fry the beef strips in batches until golden brown and crispy, about 3-4 minutes per batch. Remove and drain on paper towels.
In a separate pan, heat a tablespoon of oil over medium heat. Add Szechuan peppercorns and dried red chilies, sautéing until fragrant. Stir in minced garlic and ginger, cooking for an additional minute. Add soy sauce, rice vinegar, sugar, and sesame oil, stirring to combine. Toss the crispy beef strips in the sauce until evenly coated.
