Spicy and Sweet Chicken Bites Glazed with Pepper Jelly
Ingredients:
1 pound chicken breast, cut into bite-sized pieces
1/2 cup sweet heat pepper jelly
2 tablespoons soy sauce
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1/4 cup green onions, chopped (for garnish)
Toothpicks (for serving)
Directions:
In a large bowl, combine the sweet heat pepper jelly, soy sauce, olive oil, garlic powder, onion powder, salt, and pepper. Mix well to create a marinade.
Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper.
Arrange the marinated chicken pieces on the prepared baking sheet in a single layer.
Bake for 15-20 minutes, or until the chicken is cooked through and has a nice glaze, flipping halfway through for even cooking.
Once cooked, remove from the oven and let cool slightly.
Serve the chicken bites on a platter, garnished with chopped green onions and toothpicks for easy eating.
