Ingredients
4 medium Yukon Gold or Russet potatoes
3 tablespoons unsalted butter, melted
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
½ teaspoon salt
¼ teaspoon black pepper
½ cup grated Parmesan cheese (optional)
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a muffin tin or a small baking dish.
Thinly slice the potatoes into rounds (about 1/8-inch thick) using a sharp knife or mandoline.
In a large bowl, mix melted butter, olive oil, minced garlic, thyme, salt, and pepper. Add the potato slices and toss until well coated.
Stack the potato slices vertically into muffin cups or in a single row in your baking dish. Sprinkle Parmesan cheese over the stacks, if using.
Bake for 50-60 minutes, or until the edges are golden and crispy, and the center is tender when pierced with a fork.
Remove from the oven and let cool for 5 minutes before carefully lifting the stacks out. Serve hot and enjoy!
