Spicy Mango Chutney Cheese Log

Henrik Andersson

Ingredients:

For the cheese mixture:

8 oz (225 g) cream cheese, softened

4 oz (115 g) goat cheese or shredded sharp cheddar

1/4 cup mango chutney (store-bought or homemade)

1/2 tsp chili flakes or finely chopped fresh chili (adjust to spice preference)

1/2 tsp ground cumin

1/4 tsp garlic powder

Pinch of salt

For the coating:

1/4 cup finely chopped dried mango or apricots

2 tbsp chopped fresh cilantro

2 tbsp toasted coconut flakes

1 tsp chili flakes (optional, for extra spice)

For serving:

Crackers, naan bread, or pita chips

Directions:

Prepare the Cheese Mixture:

In a medium bowl, combine the softened cream cheese and goat cheese (or cheddar). Mix until smooth and creamy.

Add the mango chutney, chili flakes, ground cumin, garlic powder, and a pinch of salt. Stir until all ingredients are well incorporated.

Shape the Cheese Log:

Lay a large piece of plastic wrap on your countertop.

Transfer the cheese mixture onto the wrap and shape it into a log. Use the wrap to roll it tightly and evenly.

Wrap the log securely in the plastic wrap and refrigerate for at least 2 hours (or overnight) to firm up.

Coat the Cheese Log:

In a shallow dish, combine the chopped dried mango, cilantro, toasted coconut flakes, and additional chili flakes (if using).

Remove the chilled cheese log from the refrigerator and unwrap it from the plastic wrap.

Roll the cheese log in the coating mixture, pressing gently to ensure an even layer.

Serve:

Place the Spicy Mango Chutney Cheese Log on a serving platter. Garnish with extra cilantro and a drizzle of mango chutney if desired.

Serve with crackers, naan bread, or pita chips.

Tips:

Adjust the spice level by increasing or reducing the chili flakes.

For a tropical twist, add a splash of lime juice to the cheese mixture.

This cheese log can be made up to a day in advance; store tightly wrapped in the refrigerator.
