Spiced-Up Jamaican Curry Chicken

Ingredients:
¼ cup vegetable oil
2 boneless skinless chicken breasts, cut into 1" cubes
1 yellow onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
3 garlic cloves, minced
1 large tomato, chopped
2 tablespoons Jamaican curry powder
½ teaspoon paprika
Pinch of red pepper flakes
Zest of 1 lime
Juice of 1 lime
1 cup chicken broth
¼ teaspoon black pepper
¼-½ teaspoon salt (to taste)
2 slices of habanero pepper (optional for extra heat)
Instructions:
Heat oil in a large skillet on medium-high heat. Brown the chicken breast pieces for 1-2 minutes per side.
Remove chicken and set it aside.
Add onion and garlic to the skillet, cooking for 2-3 minutes until softened.
Toss in tomato, bell peppers, Jamaican curry powder, lime zest, lime juice, paprika, and red pepper flakes. Stir well and cook for 5-6 minutes.
Add the chicken back to the skillet, pour in the chicken broth, and reduce the heat to low. Simmer covered for 20 minutes, stirring occasionally.
Season with salt and pepper to taste, garnish with parsley, and serve with rice, potatoes, or your preferred side.
