Shrimp Chimichurri

Juicy shrimp meets bold, herby chimichurri—fresh, flavorful, and ready in minutes!


Ingredients

Chimichurri Sauce:


1 cup chopped parsley

¼ cup chopped cilantro

2 tbsp red wine vinegar

2 tbsp lemon juice

3 garlic cloves, minced

½ tsp red pepper flakes (optional)

½ cup olive oil

Salt and pepper

Shrimp:

1 lb large shrimp, peeled and deveined

1 tbsp olive oil

Salt and pepper


Instructions

Make the chimichurri.

Mix parsley, cilantro, vinegar, lemon juice, garlic, and red pepper flakes.

Whisk in olive oil. Add salt and pepper. Let sit 15–20 minutes.


Cook the shrimp.

Heat oil in a skillet over medium-high.

Season shrimp, then cook 2–3 minutes per side until pink and opaque. Remove from heat.


Serve.

Plate the shrimp and spoon chimichurri on top.

Enjoy with rice, veggies, bread, or salad.
