Oven Fried Potatoes & Onions

Ingredients:
- 4 medium potatoes (peeled and cut into wedges)
- 1 large onion (sliced into rings)
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried rosemary (or thyme)
- 1/2 tsp paprika
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley (optional, for garnish)
Directions:
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Step 2: Prepare the Potatoes and Onions
Cut the potatoes into wedges and slice the onion into rings. Place them in a large bowl.
Step 3: Season the Vegetables
Drizzle the olive oil over the potatoes and onions, then sprinkle with garlic powder, onion powder, rosemary, paprika, salt, and pepper. Toss everything together until the potatoes and onions are evenly coated with the seasoning.
Step 4: Arrange on the Baking Sheet
Spread the seasoned potatoes and onions in a single layer on the prepared baking sheet. Try to keep the potatoes in a flat layer for even cooking.
Step 5: Bake
Bake for 25-30 minutes, or until the potatoes are golden brown and crispy on the edges, turning halfway through the cooking time.
Step 6: Garnish & Serve
Once the potatoes are done, remove from the oven and garnish with chopped fresh parsley if desired.
Storage:
- Store any leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in the oven at 350°F (175°C) for about 10 minutes to keep the crispiness.
