Mexican-Style Shredded Chicken with Onions

Ingredients
For the Chicken:
2 lbs (900g) boneless, skinless chicken breasts
1 large onion, sliced
3 garlic cloves, minced
1 cup chicken broth
1 cup tomato sauce
2 tsp ground cumin
2 tsp chili powder
1 tsp smoked paprika
1 tsp oregano
Salt and pepper to taste
Extras:
Lime wedges for garnish
Fresh cilantro for topping
Instructions
Cook the Chicken:
Place the chicken breasts in a slow cooker or large pot.
Add the sliced onion, garlic, chicken broth, and tomato sauce.
Sprinkle in the cumin, chili powder, smoked paprika, oregano, salt, and pepper.
Simmer to Perfection:
For a slow cooker, set on low for 6–7 hours or high for 3–4 hours.
For a stovetop, bring to a gentle boil, then reduce the heat to low, cover, and simmer for 45 minutes until tender.
Shred the Chicken:
Remove the chicken from the pot and shred using two forks.
Return the shredded chicken to the pot and stir to coat in the flavorful sauce.
Serve and Enjoy:
Garnish with lime wedges and fresh cilantro.
Serve as a filling for tacos, over rice, or in your favorite Mexican dishes.
