Mediterranean Marinated Feta and Olives Bowl

Ingredients

Cheese & Olives:


1 cup feta cheese, cubed or crumbled

1 cup mixed olives (green, Kalamata, etc.), pitted if desired

1/2 cup sun-dried tomatoes, drained and chopped

For the Marinade:


1/2 cup extra virgin olive oil

2 tablespoons red wine vinegar (or lemon juice for more zing)

2 cloves garlic, finely minced

1 tablespoon fresh rosemary or thyme, chopped (or 1 teaspoon dried herbs)

1 tablespoon fresh parsley, chopped

Salt and pepper, to taste

1/4 teaspoon crushed red pepper flakes (optional, for heat)

Instructions

1️⃣ Prepare the Ingredients:


Cube or crumble the feta cheese and add it to a serving bowl.

Add the mixed olives and sun-dried tomatoes.

2️⃣ Make the Marinade:


In a small bowl, whisk together the olive oil, red wine vinegar (or lemon juice), minced garlic, chopped herbs (reserving some for garnish), salt, pepper, and red pepper flakes (if using).

3️⃣ Combine & Marinate:


Pour the marinade over the feta, olives, and sun-dried tomatoes. Gently toss to ensure everything is evenly coated.

Let it sit at room temperature for 15-30 minutes to allow the flavors to meld, or cover and refrigerate for up to 1-2 hours for more intense flavors.

4️⃣ Serve:


Garnish with reserved fresh herbs and an extra drizzle of olive oil.

Serve with crusty bread, crackers, or as part of a mezze platter.
