Mediterranean Baked Fish

A vibrant and healthy dish featuring white fish fillets baked with juicy cherry tomatoes, briny olives, and fresh herbs. Perfect for a flavorful and quick dinner.


Ingredients:


4 white fish fillets (e.g., cod, tilapia, or snapper)

2 tablespoons olive oil

3 garlic cloves, minced

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, sliced

1/2 red onion, thinly sliced

1/4 cup fresh parsley, chopped

1 teaspoon dried oregano

1/2 teaspoon paprika

Juice of 1 lemon

Zest of 1 lemon

Salt and pepper, to taste

Directions:


Prepare the Oven and Baking Dish:

Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.


Season the Fish:

Pat the fish fillets dry with paper towels and arrange them in the prepared baking dish. Season both sides of the fillets with salt and pepper.


Make the Marinade:

In a small bowl, combine olive oil, minced garlic, oregano, paprika, lemon zest, and lemon juice. Mix well and drizzle the marinade evenly over the fish fillets.


Add Vegetables:

Scatter the halved cherry tomatoes, sliced Kalamata olives, and red onion around the fish in the baking dish.


Bake the Fish:

Bake in the preheated oven for 15–20 minutes, or until the fish is opaque and flakes easily with a fork.


Garnish and Serve:

Sprinkle fresh parsley over the baked fish before serving. Serve hot with crusty bread, steamed rice, or roasted vegetables for a complete Mediterranean-inspired meal.


Tips:


Swap Kalamata olives for capers if you prefer a tangy twist.

Add a sprinkle of feta cheese before baking for extra creaminess.

Pair with a simple arugula salad drizzled with olive oil and lemon juice.
