Indian Butter Chicken

The rich sauce and tender chicken make it so comforting. Yum!


Ingredients:

- 1 pound (450g) chicken thighs, boneless and skinless, cut into pieces

- 1 cup plain yogurt

- 2 tablespoons lemon juice

- 1 tablespoon ginger-garlic paste

- 1 teaspoon garam masala

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon chili powder

- Salt to taste

- 3 tablespoons butter

- 1 medium onion, finely chopped

- 1 can (14 oz) crushed tomatoes

- 1/2 cup heavy cream

- Fresh cilantro for garnish


Instructions:

1. In a bowl, mix the yogurt, lemon juice, ginger-garlic paste, garam masala, cumin, coriander, turmeric, chili powder, and salt. Add the chicken pieces and marinate for at least 1 hour, preferably overnight.

2. Heat 2 tablespoons of butter in a large pan over medium heat. Add the chopped onion and sauté until golden brown.

3. Add the marinated chicken (remove excess marinade) and cook until the chicken is browned and cooked through, about 7-10 minutes.

4. Pour in the crushed tomatoes and simmer for 10 minutes, stirring occasionally.

5. Add the heavy cream and remaining tablespoon of butter. Stir until well mixed and let it simmer for another 5 minutes.

6. Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.


Tips:

- Serve with rice or naan for a complete meal.

- You can adjust the spice level by adding more or less chili powder.

- For extra flavor, try adding a pinch of fenugreek leaves.
