Ingredients:
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
1 cup sour cream
1/2 cup chopped pistachios
1 1/2 cups cherry pie filling
Directions:
Preheat oven to 325°F (165°C). Line a 9x13-inch baking pan with parchment paper.
In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
In a large bowl, beat the cream cheese and sugar until smooth. Add the vanilla extract and mix well.
Add the eggs one at a time, beating well after each addition. Mix in the sour cream until fully combined.
Pour the cream cheese mixture over the crust and spread it evenly.
Dollop the cherry pie filling over the cream cheese layer and swirl gently with a knife to create a marbled effect.
Sprinkle the chopped pistachios on top.
Bake for 40-45 minutes, or until the cheesecake is set and slightly golden around the edges.
Allow to cool to room temperature, then refrigerate for at least 2 hours before cutting into bars.
