Golden Cheesy Mashed Potato Puffs

Recipe

Ingredients:


4 cups mashed potatoes (preferably made ahead and cooled)

1 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

2 eggs

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 cup chopped fresh chives (optional)

1/4 cup breadcrumbs (for coating)

2 tablespoons olive oil (for greasing the baking sheet)

Instructions:


Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with olive oil.

In a large bowl, combine the mashed potatoes, shredded cheddar cheese, grated Parmesan, eggs, garlic powder, onion powder, salt, and pepper. Mix well until fully incorporated.

Form the mashed potato mixture into small puffs, about 1.5 inches in diameter, and place them on the prepared baking sheet.

Lightly coat each potato puff with breadcrumbs, then place them back on the sheet.

Bake for 15-20 minutes, or until the tops are golden brown and crispy.

Remove from the oven and let cool for a few minutes before serving. Garnish with chopped chives, if desired.
