French Onion Short Rib Soup with Cheesy Gruyère Toast

Ingredients:

- 2 lbs beef short ribs

- 4 large onions, thinly sliced

- 4 cloves garlic, minced

- 6 cups beef broth

- 1 cup dry red wine

- 2 tbsp olive oil

- 2 tbsp butter

- 1 tbsp fresh thyme (or 1 tsp dried thyme)

- 1 bay leaf

- Salt and pepper to taste

- 8 slices of baguette

- 1 ½ cups grated Gruyère cheese


Directions:

1. In a large pot, heat the olive oil over medium-high heat. Add the short ribs and brown them on all sides. Remove the ribs and set aside.

2. In the same pot, add butter and sliced onions. Cook on medium heat, stirring often, until the onions are caramelized, about 20-25 minutes.

3. Add the minced garlic and cook for another 2 minutes until fragrant.

4. Pour in the red wine and scrape the bottom of the pot to release any browned bits. Let it simmer for about 5 minutes.

5. Return the short ribs to the pot. Add the beef broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and let it simmer for 2-3 hours until the meat is tender.

6. While the soup is simmering, preheat your oven to 400°F (200°C).

7. Place the baguette slices on a baking sheet. Top each slice with a generous amount of Gruyère cheese.

8. Bake in the oven for about 10 minutes or until the cheese is melted and bubbly.

9. Once the short ribs are done, remove them from the soup. Shred the meat and discard the bones. Return the shredded meat to the soup and stir to combine.

10. Serve the soup hot in bowls, topped with cheesy Gruyère toast on the side.
