Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup cornstarch
- 1/4 cup vegetable oil for frying
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1-2 tsp chili paste (adjust to taste)
- 1/2 tsp sesame oil
- 1/4 cup green onions, chopped for garnish
- Sesame seeds for garnish (optional)
Directions:
In a mixing bowl, toss the chicken pieces with cornstarch until evenly coated. Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the chicken in batches, frying until golden brown and crispy, about 5-7 minutes. Remove the chicken and drain on paper towels. In the same skillet, add sliced red bell pepper, garlic, and ginger, sautéing for 2-3 minutes until fragrant. In a small bowl, whisk together soy sauce, honey, rice vinegar, chili paste, and sesame oil. Pour the sauce over the sautéed vegetables, stirring to combine. Add the crispy chicken back into the skillet, tossing everything together until well coated in the sauce. Cook for an additional 2-3 minutes to heat through. Garnish with chopped green onions and sesame seeds if desired. Serve hot over steamed rice or noodles.
