This Crispy Shredded Beef is a delicious and versatile dish that’s perfect for weeknight dinners or meal prep. The slow cooking process ensures the beef is tender and flavorful, while the final crisping step adds a delightful texture. Whether you’re serving it in tacos, over rice, or as a filling for sandwiches, this recipe is sure to impress and satisfy your cravings for hearty comfort food!


Ingredients:


- 1 lb (450g) beef chuck roast, cut into large pieces

- 2 cups beef broth

- 1 medium onion, sliced

- 3 cloves garlic, minced

- 1 tsp ground cumin

- 1 tsp smoked paprika

- 1/2 tsp black pepper

- 1/2 tsp salt

- 1/4 cup soy sauce

- 2 tbsp vegetable oil

- Optional: chopped cilantro and lime wedges for serving


Directions:


In a slow cooker, combine the beef chuck roast, beef broth, sliced onion, minced garlic, ground cumin, smoked paprika, black pepper, salt, and soy sauce. Cover and cook on low for 8 hours or until the beef is tender and easily shreds with a fork. Once cooked, remove the beef from the slow cooker and shred it using two forks.


In a large skillet, heat vegetable oil over medium-high heat. Add the shredded beef to the skillet in a single layer and cook for about 5-7 minutes, allowing it to crisp up on one side. Flip the beef and cook for an additional 5-7 minutes until crispy and golden brown.


Serve the crispy shredded beef with chopped cilantro and lime wedges for an extra burst of flavor. Enjoy it in tacos, burritos, or on its own!
