Classic Pot Roast with Potatoes and Carrots

This slow-cooked, melt-in-your-mouth pot roast is rich in flavor, complemented by tender potatoes and carrots. It’s a one-pot meal perfect for family dinners and special occasions.
Ingredients
For the Pot Roast:
3–4 lb beef chuck roast
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tbsp Worcestershire sauce
1 tbsp tomato paste
1 large onion, sliced
4 cloves garlic, minced
2 cups beef broth
½ cup red wine (optional, or substitute with more broth)
1 tbsp balsamic vinegar
For the Vegetables:
4–5 medium potatoes, halved (Yukon Gold or red potatoes)
3–4 large carrots, cut into chunks
1 tsp dried thyme
1 tsp dried rosemary
1 tsp dried oregano
For Thickening (Optional):
2 tbsp cornstarch
2 tbsp water
Instructions
Prepare the Roast
Pat the chuck roast dry with paper towels. Season generously with salt, black pepper, garlic powder, and onion powder.
Heat olive oil in a large Dutch oven or slow cooker insert over medium-high heat.
Sear the roast on all sides for about 3-4 minutes per side until browned.
Build the Flavor
Remove the roast and set aside. In the same pot, sauté onions and garlic until fragrant, about 2 minutes.
Stir in tomato paste, Worcestershire sauce, and balsamic vinegar. Cook for 1 minute to deepen the flavor.
Pour in beef broth and red wine (if using). Scrape up browned bits from the bottom of the pan.
Slow Cook the Pot Roast
Oven Method:
Preheat oven to 300°F (150°C).
Place the roast back into the pot and cover. Bake for 3-4 hours until tender.
Slow Cooker Method:
Place the roast in the slow cooker.
Add potatoes, carrots, thyme, rosemary, and oregano around the meat.
Pour the broth mixture over the top. Cover and cook on LOW for 8 hours or HIGH for 4-5 hours.
Thicken the Gravy (Optional)
Remove the roast and vegetables from the pot.
In a small bowl, mix cornstarch and water to form a slurry. Stir it into the pot juices and simmer until thickened.
Serve & Enjoy
Shred the pot roast with forks and serve with the potatoes, carrots, and rich gravy.
Garnish with fresh parsley for extra flavor!
