Chicken Burritos

Ingredients:

- 2 cups cooked chicken (shredded or diced)

- 4 large flour tortillas

- 1 cup cooked rice (white or brown)

- 1 avocado (sliced or mashed)

- 1 cup black beans (drained and rinsed)

- 1 cup diced tomatoes

- 1/2 cup shredded cheese (cheddar or your choice)

- 1/4 cup sour cream or Greek yogurt

- 1/4 cup fresh cilantro (chopped)

- Lime wedges (for serving)

- Salt and pepper to taste

- Olive oil (for cooking)


Instructions:


1. Prepare the Chicken:

If not already cooked, season chicken with salt and pepper and cook in a skillet with a drizzle of olive oil until fully cooked. Shred or dice the chicken.


2. Warm the Tortillas:

In a dry skillet or microwave, warm the tortillas for easy folding.


3. Assemble the Burrito:

On each tortilla, layer the rice, cooked chicken, black beans, diced tomatoes, avocado, cheese, and cilantro.


4. Add Sauce:

Top with sour cream and a squeeze of lime juice.


5. Roll the Burrito:

Fold in the sides and roll up from the bottom to enclose the filling.


6. Toast the Burrito:

In the skillet, add a little olive oil and toast the burritos seam-side down until golden and crispy, about 2-3 minutes per side.


7. Serve:

Slice in half and serve with lime wedges on the side.
