Chicken Biryani

Ingredients:
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 large onion, sliced
- 2 tomatoes, chopped
- 1 cup yogurt
- 2 tbsp biryani masala
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander powder
- 4 cloves
- 2 cardamoms
- 1 cinnamon stick
- 1 bay leaf
- 2 tbsp ghee or oil
- 2 cups water
- Fresh coriander and mint for garnish
Instructions:
1. Wash and soak rice for 30 minutes.
2. Heat ghee in a pot, add whole spices, then onions, and sauté until golden brown.
3. Add tomatoes, chicken, spices, and yogurt. Cook until chicken is tender.
4. In a separate pot, boil the rice until 70% cooked, then drain.
5. Layer chicken and rice, cover, and let it steam for 20 minutes on low heat.
6. Garnish with coriander and mint. Serve hot.
