Cheesy Golden Mashed Potato Puffs

Ingredients:
2 cups mashed potatoes
1 cup shredded cheddar cheese
1/4 cup sour cream
1/4 cup breadcrumbs
1/4 teaspoon garlic powder
Salt & pepper, to taste
1 tablespoon chopped parsley
Directions:
Preheat your oven to 375°F (190°C) and grease a muffin tin.
In a bowl, combine mashed potatoes, cheddar cheese, sour cream, breadcrumbs, garlic powder, salt, and pepper.
Scoop the mixture into the muffin tin, pressing down lightly.
Bake for 15-20 minutes or until the tops are golden and crispy.
Garnish with chopped parsley and serve warm. Perfect for a side dish or snack!
