Braised Beef with Red Peppers and Caramelized Onions

Ingredients:
2 lbs beef chuck or short ribs, cut into chunks
2 tablespoons olive oil
1 large onion, thinly sliced
2 red bell peppers, sliced
3 garlic cloves, minced
2 tablespoons tomato paste
1 cup beef broth
1/2 cup red wine (optional)
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Sear the Beef:
Heat olive oil in a large pan or Dutch oven over medium-high heat.
Season the beef with salt and black pepper, then sear on all sides until browned. Remove and set aside.
Caramelize the Onions & Peppers:
In the same pan, add sliced onions and cook for 5 minutes until softened.
Add red bell peppers and cook for another 3-4 minutes.
Stir in minced garlic and tomato paste, cooking for 1 minute.
Deglaze & Simmer:
Pour in red wine (if using) and scrape up any browned bits from the pan. Let it reduce for 2 minutes.
Add beef broth, Worcestershire sauce, smoked paprika, and oregano. Return the beef to the pan.
Braise the Beef:
Cover and simmer on low heat for 2.5-3 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
Serve & Garnish:
Plate the braised beef with peppers and onions, spooning extra gravy over the top.
Garnish with fresh parsley and serve warm.
